Kale Salad

Nothing healthier than a kale salad except a kale salad with Alpine Avocado Vinaigrette.  I know, a shameless plug, but it’s the truth!

Fun facts:  Kale is very high in beta beta carotene, vitamin K, vitamin C, and rich in calcium. Kale also contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties.

I like my salads to be BIG, so I use a BIG bowl and pack it full of a ton of variety. That said, the ingredients below are more of a “core” set of ingredients that taste great as is, or with additional items of your choosing. One personal preference, I prefer not to include the “spine” of the leave that’s thicker than a twig in my kale salad…too chewy for my liking.

Ingredients:
Chopped kale
Dried cranberrieskalebundle
Goat cheese (chèvre or feta)
Toasted sliced almonds
Cucumber
Quinoa

It doesn’t get any easier to prepare:

  1. Massage kale with Alpine Avocado Vinaigrette first
  2. Add the remaining items + your favorite “must haves”
